Baked Avocado Eggs
Super easy

Delicious eggs baked in avocados always fills us up. This dish can be varied endlessly by changing up the garnish.

Ingredients

For 2 Person(s)

2 avocados
4 eggs
salt & pepper
granish as prefered (feta, cheese, bacon, salsa, chopped nuts, herbs)

Baked Avocado Eggs Directions

Preheat the oven to 220 C or 430 F degrees.

Divide the avocados in halfs and remove the core stones. Remove about 2 tablespoons of avocado flesh from each half to make room for eggs.

Crack the eggs carefully and pour one in each half.

Place into the oven. Bake for 17-20 minutes.

Season and add the desired garnish before serving.
