Fluffy Aquafaba Chocolate Mousse
This mousse consists mainly of Aquafaba. When you buy canned chickpeas, Aquafaba is the liquid they are in. Aquafaba contains almost no carbohydrates!
|240 ml Aquafaba, from a 400 g can of chickpeass|
|140 g dark chocolate, 70% cacao or darker|
|1 tsp powdered erythritol, optional|
|2 pinches chili powder spice, optional|
|1 tbl decoration of choice (dark chocolate, pistachios, pomegranate seeds)|
Fluffy Aquafaba Chocolate Mousse Directions
Divide the chocolate into smaller pieces and melt it over a hot water-bath. Let it cool slightly.
Open the can of chickpeas and strain the liquid (called Aquafaba) into a large bowl. Make sure the hand mixer is completely clean before whipping the liquid Aquafaba. You should whip it completely stiff (it can take up to 15 min). It must be so stiff that you can turn the bowl upside down without the foam moving at all!
Then add erythritol little by little while whisking. If it collapses, just whip the batter back up. When the chocolate has cooled, turn it into the foam with a spatula. Add chili powder and mix well.
Divide the mousse into 4 glasses and let cool for at least 3 hours before enjoying it. It can also be left overnight.
